Garden Medley

Serves 10-12
- 1 1/2 cups brown rice
2 tablespoons melted butter
3 cups chicken broth
3 tablespoons soy sauce
1 chopped onion
1/2 teaspoon thyme
1/2 teaspoon salt
1 chopped onion (a second one)
2 garlic cloves, crushed
1 pound chopped broccoli
1 head chopped cauliflower
2 thinly sliced red bell peppers
3 tablespoons peanut oil
1 cup cashews
2 cups grated cheddar cheese
- Combine uncooked brown rice, melted butter, chicken broth, soy sauce, and
one chopped onion in a Dutch oven. Cover and bake (about 350F) for about 20
minutes.
- While rice is cooking, sauté one chopped onion, crushed garlic, chopped
broccoli, chopped cauliflower, and sliced red bell peppers in oil in skillet
for 5 minutes.
- When rice has cooked for 20 minutes, stir thyme and salt into rice. Spoon
vegetables over rice mixture, cover and bake for 10 more minutes or until
rice is tender.
- Sprinkle with cashews and grated cheddar cheese and bake for 5 more
minutes until cheese melts.
Grilled Corn on the Cob with
Garlic

Prep Time: 45 minutes
Serves 1 ear per person, recipe is written for 8
- 8 tablespoons butter
1 tablespoon seasoned garlic salt
8 ears corn
1/4 cup grated Parmesan cheese
8 twelve inch pieces of aluminum foil
- In a small saucepan over low heat, melt butter with garlic salt.
- Gently pull back husks on corn and remove the corn silk. Replace outer
husks, leaving one section pulled back. Place each ear of corn on a 12 inch
piece of aluminum foil.
- Pour 1 tablespoon of the melted butter mixture along the opening of each
cob. Replace the remaining piece of pulled back husk. Wrap cob in aluminum
foil and place on coals.
- Cook 20 minutes, turning twice during cooking time. Serve in husk.
Sprinkle with Parmesan cheese.
Steamed Broccoli

Prep Time: 30 minutes, a very easy dish to prepare
A couple stalks of fresh broccoli per person
Water
Seasoning
- Put about 1 inch of water in the bottom of the Dutch oven. Put Dutch oven
over medium-high heat.
- Slice broccoli into pieces about 2-3 inches long
- Add broccoli to Dutch oven
- Cover. Steam the broccoli for 15-30 minutes until tender. I usually open
the oven and "turn" the broccoli (move the top to the bottom)
after about 10 minutes.
- Sprinkle on seasoning and serve. Try Lawry's Seasoned Salt or Lizy's
Complete Seasoning. You can also make up your own vegetable seasoning.
